    Carrot casserole
    This simple recipe for carrot casserole is baked in the oven as the basis for cooked barley barley or rice, as well as plenty of freshly grated carrots, fresh parsley, mixed with a pour of eggs and a little milk.
     
    Together with a salad for 3 people, this results in a sufficiently filling vegetarian main course or divided into 4 - 5 servings, a side dish with fried meat, fish, meatballs etc.
     
    Ingredients: for 3 - 4 people
    125 g barley barley extra coarse
    or rice
    500 ml broth or salt water
    approx. 350 g carrots (3-4 pieces)
    3 eggs gr. M
    100 ml milk 1.5% fat
    plenty of fresh parsley
    Salt,
    some grated nutmeg
    or pepper
    20 g parmesan cheese
    10 g butter
     
    Preparation:
    For the preparation when using barley barley, soak it in plenty of cold water (as with dried lentils) in the evening before preparation.
     
    The next day, strain through a sieve and cook together with 500 ml of broth for 35 minutes until soft, then cool the saucepan, do not strain, the rest of the broth is sucked in a little by the pearl barley.
     
    Or without soaking the pearl barley, cook it softly in plenty of 60 minutes.
     
    When using rice, cook it in salted water as usual.
     
    Preheat the oven to 210 ° C.
     
    Peel the carrots with a peeler, roughly grate on a vegetable grater,
    mix with the pre-cooked pearl barley or rice.
    Whisk three eggs with a fork, add cold milk, salt and spices and fold into the carrot and pearl barley mixture.
     
    Also chop finely chopped parsley. Pour the whole mixture into a fire-proof casserole dish coated with a little butter, smooth the top a little, freshly grated Parmesan cheese, or sprinkle another type of cheese on top of your own taste, topping with a few small pieces of butter.
     
    Place the carrot casserole on the rack in the middle of the oven and bake at 210 ° C with top / bottom heat for about 35 minutes.
