Organic Kohlrabi 1 KG Region Gran Canaria

  • Simple Kohlrabi vegetables
    In this recipe for a simple Kohlrabig, it is the type of housewife, which have been prepared in this way over generation of our mothers and grandmothers.
     
    Ingredients for 4 persons
    3 - 4 fresh kohlrabi
    500 - 700 ml broth (finished product)
    For the light roux:
    1 go EL butter or margarine (30 g)
    2 tablespoons flour (about 35 g)
    About 300 ml of cooking stock from kohlrabi
    salt
    Ground nutmeg
    Parsley to sprinkle
     
    Preparation:
    For the preparation of the kohlrabi vegetables first, depending on the size, from 3 - 4 kohlrabi tubers remove the leaves. Set the tender leaves aside. These leaves are needed later as a set. Peel the fresh kohlrabi thinly. This can be done with a knife or a peeler. Peel less at the tender points, remove more peel at the slightly "tougher" spots of the kohlrabi until the tender part of the kohlrabi comes out.
     
    Then the vegetables with a large kitchen knife first in slices, then cut into even pens.
    Pour approx. 500 - 700 ml vegetable broth in a saucepan, add the kohlrabi sticks to the saucepan and boil the whole contents once.
     
    Then cook the kohlrabi vegetables slowly at a temperature of about 5 - 7 minutes.
    Strain the kohlrabi through a sieve, collect the vegetable cooking water.
     
    For the completion of the Kohlrabi vegetables, a bright roux is quickly prepared from the ingredients for the light roux. The light roux gives a tender and light sauce for the kohlrabi vegetables.
     
    The bright roux then with the heating stage switched back, stirring constantly, let boil for a few minutes.
    If the sauce is too thick, add some vegetable stock again.
     
    Season the vegetables to taste with salt and a little ground nutmeg.
    Put the kohlrabi in the light sauce and fold carefully. Simmer briefly until the kohlrabi is warmed up.
     
    Sprinkle with the tender, tender cabbage leaves and finely chopped fresh parsley. Serve.
     
    For this simple, but always good tasting Kohlrabi vegetables you can serve as another side dish boiled potatoes or rice.
    In addition, any piece of short-roasted meat such as chop, a steak, meatballs, one or two fried eggs, or a slice of fish fillet, make a popular main course for the whole family.
