  • Carrot casserole
    In this recipe simple carrot casserole in the oven are baked as a base before cooked barley barley or rice, as well as plenty of freshly grated carrots, fresh parsley, mixed with a cast of eggs and a little milk.
     
    This, together with a salad for 3 people, will give you a satisfyingly satisfying vegetarian main course or split into 4 - 5 servings, with a side of short roast meat, fish, meatballs etc.
     
    Ingredients: for 3 - 4 persons
    125 g barley barley extra coarse
    or rice
    500 ml broth or salt water
    about 350 g of carrots (3-4 pieces)
    3 eggs Gr. M
    100 ml of milk 1.5% fat
    plenty of fresh parsley
    Salt,
    some grated nutmeg
    or pepper
    20 g of Parmesan cheese
    10 g butter
     
    Preparation:
    For the preparation when using barley barley, soak it in the evening before preparation in plenty of cold water (as with dried lentils).
     
    Strain the next day through a sieve and boil together with 500 ml broth for 35 minutes, then put the pot a little cooler, do not strain, the remaining broth is absorbed by the barley.
     
    Or without previously soaking the barley, cook it soft in plenty of 60 minutes.
     
    When using rice, cook it as usual in salted water.
     
    Preheat the oven to 210 ° C.
     
    Peel carrots with a peeler, grate on a vegetable grater,
    mix with pre-cooked barley or rice.
    Whisk three eggs with a fork, add cold milk, salt and spices and fold into the carrot and pearl barley mixture.
     
    Finely chopped parsley also undergo. Pour the whole mixture into a fire-proof casserole dish with a little butter, smooth the top slightly, grate freshly grated Parmesan cheese or, according to personal taste, sprinkle with another kind of cheese, topping it with a few pieces of butter.
     
    Place the carrot casserole on the grid in the middle of the oven and bake at 210 ° C, with top / bottom heat for about 35 minutes.
