  • Carob, name of Arab origin, is native to the Mediterranean region, especially in the eastern and southern part of Spain. It is the fruit of the carob tree, which is a perennial flowering tree that can reach up to eighteen meters high. Carob is grown for its edible seeds. It is found in its natural form in southern Anatolia, Cyprus, Syria, Greece, Spain, Morocco, Tunisia, Algeria, Libya and Israel. Consumed since ancient times, it is also known as "San Juan bread". The dried carob fruit is traditionally consumed at the Jewish holidays and the juice is taken by the Muslims, during the month of Ramadan. It is used as a substitute in the manufacture of various products, such as baked goods, bars, snacks, cereals, dairy products, cocoa-containing products and beverages. It is an energy food because it contains 50% natural sugar. The seeds are rich in soluble fiber so they facilitate digestion.
